Asian Sea Bass on Asian Greens

Good meals can be very simple, fast and really easy to make.
Go to the fish market and get yourself a nice Asian sea bass or any good sea bass. If you can't fillet it yourself, get the fishmonger to do it for you. Go skinless for this dish.
If your fish has been in the fridge or is too cold, make sure you get it out about 15-20 mins before you start cooking it. If it is too cold, it will burn on the outside and not cook through in time.
Now, cut your broccoli and asparagus to the desired size (bite size or slightly bigger) and put them aside. In the mean time, boil some water.
In a small bowl, add two table spoons of olive oil, 1 table spoon of soy sauce, 1 unpeeled crushed clove of garlic, a squeeze of lime and a drop of sesame oil. give them a good mix until you get a rich brown sauce. Taste and adjust to preference.
Too cook the fish, heat up a non-stick pan and season your fillet with salt and pepper. Once the pan is really hot, reduce the heat to medium, drizzle a bit of olive oil, lay your fish on the flatter side and hold it down for 3 seconds. Watch as the fish cooks through (notice the colour change).
Once your fish is about 80% cooked through, flip it. Cook your veggies in the boiling water for 2 minutes (also known as blanching). Which is the same time your fish will need to continue cooking. Use a spatula to pick up your fish from the pan without flipping it.
Place your veggies on a plate, add the fish -crispy side on top- and drench with the sauce you made earlier. Bon Appetit!
