Roasted Tomato Soup

This could be one of the simplest, most delicious soups you would have -if you like tomatoes-.

Pre heat your oven to 200 degrees. Start off by halving cherry tomatoes and garlic cloves. Use as much garlic as you please. Then lay them all in a roasting trey or an oven proof pan. Season with a good amount of salt, pepper and olive oil. Annnnd in the oven it goes.

30 mins later, pull the babies out. Please use an oven glove or a dry cloth. Empty your tomatoes and garlic in a blender, add a good bunch of basil and all the juices from that roast. Blend and add water to reduce thickness -if you wish-.

I added two chilli's to this soup because I like a bit of spice.

You can also put the soup through a strainer, to get rid of the skin and seeds.

Once you serve it, add a dash of cream and olive oil. And Bon Appetit!!
