Waking up really hungry in the morning gives me delicious ideas. I want some savoury food, I want something creamy, I want to dip things in things and I want something healthy. So, why not combine all in one, or two! When I want to eat multiple things and I seriously cannot make the choice, I just make it all.
Toasted brown bread lightly brushed with melted butter. On the left is herby cream cheese, eggs and seared mushrooms. On the right is slices of Edam cheese on a bed of salad rocket (rucola), topped with guacamole and cherry tomatoes.
Ingredients:
Ciabatta Bread
Cream Cheese
Butter
Eggs
Mushrooms
Thyme
Avocado
Cherry Tomatoes
Salad Rocket (Rucola)
Edam Cheese
Lime Juice
Salt & Black Pepper
Some Tips:
- Mix your favourite herb -preferrably fresh- with the cream cheese to add aroma and character. I recommend using one or two tops, to ensure a distinctive and clear flavour.
- A simple Guacamole works perfectly with this sandwich. Ripe avocados and salt, with a drizzle of lime or lemon juice is all you need. But if you prefer the traditional Guac, then simply add some chopped coriander, chili, tomato, onion and black pepper to the previous combination.
- Mushrooms are rich in flavour. All you need to season them is a drizzle of olive oil, salt and pepper. I always like to add a a slightly crushed garlic clove and a branch of thyme to the mix while cooking. Then covering them with a lid to create a cloud of flavours. Once that is done, I continue cooking until the water evaporates to enrich the taste.
