Ingredients:

Halloumi Cheese

Better than your average cheese burger

Ruccola

Bread Rolls

Olive Oil

Salt & Pepper

Burgers:

Minced Lamb

Chopped Red Onion

Crushed Garlic

Chopped Oregano

Chopped Mint

Tzatziki:

Greek Yogurt

Chopped Cucumber

Chopped Mint

Crushed Garlic

Greek Salsa:

Chopped Tomatoes

Chopped Red Onion

Chopped Kalamata Olives

Flat Leaf Parsley

Lemon Juice

To make the burger, combine the lamb, onion, garlic, oregano, mint, a drizzle of olive oil, salt and pepper in a bowl. Shape into patties. Put on a plate a refrigerate for at least 30 minutes.

In the mean time, combine the yogurt, cucumber, mint, lemon juice and garlic in a bowl, to make Tzatzkiki. Taste to get your buds satisfied.

For the salsa, combine tomato, onion, olives, parsley and oregano. Add olive oil and lemon juice, and mix. season with freshly ground black pepper.

Preheat a flat grill or pan to high.

Preheat another flat grill or pan over medium heat. Drizzle with olive oil and cook the burgers to your preferred temperature. Cook the halloumi for 30 seconds on each side or until golden-brown.

Cut the rolls in half and toast the inside on the flat grill or pan, with a touch of olive oil.

Arrange the salsa on the bottom roll and top with the halloumi. Place your burger on top, spoon on tzatzki and add some ruccola on top. close the burger and it's ready.
